How to Cook Adobo

Learn how to reinvent your pork menu by turning leftovers into a delicious adobo dish.

Filipino chicken adobo

Hesitant to serve reheated pork to your family? Transform it into a brand-new dish: adobo! It can be made with fresh or leftover chicken and pork (with the fat intact), cut into one-inch chunks, or shredded into flakes with creative garnishes. You can even fry it for breakfast the next day!

Just like any other dish, you can experiment with this versatile Filipino classic, as long as its core ingredients and composition remain largely the same. Adobo is best cooked in a thick pot with a tight lid. Prepare the following ingredients and follow these steps:

Ingredients:

  • One kilo of pork with skin and fat, or leftover pork dish
  • Six medium-sized cloves of garlic, crushed
  • Three bay leaves and a tablespoon of crushed black pepper
  • Half a cup of vinegar
  • Half a cup of soy sauce
  • A teaspoon of salt
  • A tablespoon of sugar

Directions:

  1. Boil the pork in plain water for less than five minutes.
  2. Remove it from the heat, drain, and let it cool for a few minutes.
  3. Add the garlic, bay leaves, pepper, vinegar, soy sauce, salt, and sugar.
  4. Stir to combine and place over medium heat.
  5. Cook until the vinegar and soy sauce come to a boil and slowly thicken. Reduce the heat and allow the oil to simmer the meat for a few minutes.
  6. Simmer on low heat, stirring to coat the meat in the thickened sauce, then turn off the stove.

Garnish with pineapple slices and cherry tomatoes, and serve with steamed rice. Enjoy!
